who says you have to leave the house for a good meal

Lunches are the hardest meal of the day for me. I never have enough time to devote to making this meal like I do for dinner and frankly I always seem to get stuck in a rut. My family can tell you about when I ate only sandwich pepperoni and mustard sandwiches every single day for a year. (Thinking about that now, well let's just all say it together...GAG!)

This afternoon I found myself inspired to see what I could whip up in 20 minutes or less. This was the result:

The salad is actually a very accurate knock off of the oriental chicken salad served at Applebees. I didn't have any chow mein noodles (like Applebees uses) and opted for a little shredded cheese instead. The chicken is just a strip of the Tyson Crispy Chicken Strips you can find in the freezer section. The dressing is really quick and simple to whip up.

Oriental Chicken Salad Dressing
1/8 teaspoon sesame oil
3 tablespoons honey
1 1/2 tablespoons rice wine vinegar
1/4 cup mayo
1 teaspoon dijon mustard

I have kept the dressing in the fridge for about a week before with no problem.

Then for my dessert I made a home made Orange Julius. Haven't had one of those in a really long time and it sounded so good. I have made these in the past as a kid and they were pretty good. This time I tried something a little different (the powdered sugar) and oh my goodness was it delicious.

Orange Julius Recipe
1 cup milk
1 cup water
6 oz. frozen orange juice concentrate
1/4 cup sugar
1/4 cup powdered sugar (makes it really creamy and frothy)
8-9 ice cubes
1 teaspoon vanilla

Blend completely and serve.
